Despite some recent turbulent weather, They’re busy preparing their latest cocktails, perfect for spring sipping in beer gardens. The Mermaid Pink Spritz, created by HarBar on 6th‘s Vitor Hugo Lourenco, brings the sunshine using 50ml of Mermaid Pink Gin, 100ml of Della Vite prosecco with a splash of Fever-Tree Raspberry & Rose soda in a white wine glass with ice. Garnish with a mint sprig and raspberries.
The English Garden is another light and joyful crowd-pleaser. Simply take 50ml of Mermaid Pink Gin and 100ml of apple juice and combine together in a highball glass with ice. Top up with Fever-Tree Refreshingly Light tonic and gently stir. Finish with a garnish of fresh mint and cucumber slices. Rooted in the natural landscape of a unique island, they are the Isle of Wight’s first and only distillery. Founders Xavier and Conrad along with their small team distil spirits shaped by their stunning surroundings and the unique character of the island. Doing things differently, minimising waste, using ethically sourced and often local, foraged ingredients to craft a range of smooth, complex spirits.
Their signature spirit Mermaid Gin delivers a smooth yet complex blend of fresh organic lemon zest and peppery grains of paradise, with a hint of sea air from locally foraged, fragrant rock samphire – a refreshing and invigorating serve. Mermaid’s name was inspired by its lead botanical rock samphire, known locally as ‘mermaid’s kiss’.
Alongside Mermaid Gin, they produce subtly sweet, naturally flavoured Mermaid Pink Gin, infused with fresh Island strawberries grown in the rich and fertile microclimate of the Arreton valley and Mermaid Salt Vodka (a favourite with mixologists), using salt harvested from the flood tide off the island’s southern coast. Mermaid is naturally vegan and gluten-free.
Their spirit range also includes HMS Victory-branded Navy Strength Barrel-aged Gin and Rum, which incorporates real oak from the famous warship, in a unique and exclusive partnership with the National Museum of the Royal Navy.
They are passionate about protecting the island and the planet. As part of their commitment to sustainability, conservation and a circular economy, they’re proactive in helping to protect the environment, actively working to reduce our carbon footprint and supporting reforestation and seagrass meadow restoration projects.
They are open as a bar, restaurant and shop. Spirit Taster boards can be purchased from the shop and their knowledgeable staff will be happy to talk you through the distillation process and the stories behind our brands.
Situated on the outskirts of Ryde in picturesque countryside, enjoy a Mermaid and Tonic on the terrace or relax in comfort by the log fire with a cocktail or two.
