“We’ve taken a short journey across the water to collaborate with HarBar on 6th, creating a seasonal-inspired menu and a stunning installation to celebrate crisp mornings, cosy knits and changing colours.
With the expertise of master mixologist, Vitor Hugo Lourenco, the Mermaid range has been crafted into a beautiful menu of seasonal gin & tonics, indulgent and aromatic spritzes and elegant and unforgettable classics, with something to suit every palette. A fellow sustainability enthusiast, Vitor designs his menus carefully, being cautious of each ingredient and how it can be utilised to minimise waste. “In our industry, we can make a difference with simple steps. Squeezed lemons can be used for a cordial. Strawberry leaf for syrup. From old persimmon, a shrub.” It’s his thoughtful approach that leads to unique and creative serves, all while being environmentally conscious.
Take a seat under the most recent installation of silver and green leaves, dotted with miniature Mermaid Salt Vodka, beautifully installed by Twilight Trees, a fellow carbon neutral business, and on the clearest days our island is visible across the waters. And no visit is complete without sampling the accompanying food menu, a collection of comfort cuisine and seasonal delights, best paired with a Mermaid cocktail, of course.

Rooted in the natural landscape of a unique island, they are the Isle of Wight’s first and only distillery. Founders Xavier and Conrad along with their small team distil spirits shaped by their stunning surroundings and the unique character of the island. Doing things differently, minimising waste, using ethically sourced and often local, foraged ingredients to craft a range of smooth, complex spirits.
Their signature spirit Mermaid Gin delivers a smooth yet complex blend of fresh organic lemon zest and peppery grains of paradise, with a hint of sea air from locally foraged, fragrant rock samphire – a refreshing and invigorating serve. Mermaid’s name was inspired by its lead botanical rock samphire, known locally as ‘mermaid’s kiss’.
Alongside Mermaid Gin, they produce subtly sweet, naturally flavoured Mermaid Pink Gin, infused with fresh Island strawberries grown in the rich and fertile microclimate of the Arreton valley and Mermaid Salt Vodka (a favourite with mixologists), using salt harvested from the flood tide off the island’s southern coast. Mermaid is naturally vegan and gluten-free.
Their spirit range also includes HMS Victory-branded Navy Strength Barrel-aged Gin and Rum, which incorporates real oak from the famous warship, in a unique and exclusive partnership with the National Museum of the Royal Navy.

They are open as a bar, restaurant and shop. Spirit Taster boards can be purchased from the shop and their knowledgeable staff will be happy to talk you through the distillation process and the stories behind our brands.
Situated on the outskirts of Ryde in picturesque countryside, enjoy a Mermaid and Tonic on the terrace or relax in comfort by the log fire with a cocktail or two.
