Our friends at The Bird in Hand Lovedean have become something of experts over the last 18 months & have a proven recipe for success with their local partnerships with the like of Portal Dingwall & Norris in Emsworth. The two have teamed up recently to discover the very talented Corner Fifty Three Distillery in The South Downs who have some remarkable blends with a range of weird and wonderful botanicals to set them apart from other brand owners in the market place !

UMAMI
SHIITAKE & BUTTERNUT SQUASH
If we are honest, Umami is the product of a rather drunken conversation.
Umami is a savoury flavour, the fifth taste our mouths can experience and one that is not very often characterised in drinks making.
We envisage this gin being enjoyed with rich meat dishes and strong spice.
To capture this unique characteristic we turned to a combination of continental and eastern ingredients combining shiitake mushrooms, sun-dried tomatoes, rosemary and sesame roast butternut squash.

“UMAMI RED SNAPPER
A gin Bloody Mary with a smokeysavory kick.
50 ml Umami
10 ml Lemon Juice
Dash of Tabasco
Pinch of sea salt
tsb of bbq sauce
100ml tomato juice
Add all ingredients to one half of a shaker and pass back and forth to mix. Pour over ice and garnish with freshly cracked black pepper and a sprig of rosemary. “
Cherokee
The original recipe for Cherokee gin was inspired by the whisky making process perfected by the Master Distiller, Jasper (Jack) Daniel and his fellow distillers. Cherokee draws its inspiration from the maple- charcoal filtration process perfected by Tennessee Whisky producers since the 1800’s, to which they have attributed their distinctive, smoky, sweet taste. Whilst this process wasn’t able to be replicated, it did uncover Maple as a botanical which provided a sweet and earthy flavour. The final recipe has been crafted around this unique ingredient.

THE SMOKING GUN
A twist of a classic Bourbon “Revolver”, this is a serious drink packed full of maple, coffee and citrus.
50 ml Cherokee
25 ml Coffee Liqueur
2 dashes Orange Bitters
Stir over ice until bitterly cold, aromatize a coupe glass with orange oil and strain,
Garnish with orange peel
POMELO
PINK GRAPEFRUIT AND WORMWOOD
Pomelo was born purely through experimentation and a desire to pack a gin full of as much clean, fresh flavour as possible.
This led us to our knowledgeable local greengrocer, Nigel, who guided us through the remarkably temperamental and seasonal world of fresh produce.
Guided by flavour combinations used in classic New Orleans cocktails, we settled on a balance of pink grapefruit, Cox pippin apples and conference pears, offset by aromatic wormwood and sweet liquorice.

COX PIPPIN FLIP
A funky apple flip served up with egg whites, a real show stopper blends the fruit forward gin with fresh apple juice.
50 ml Pomelo
25 ml lemon juice
15ml sugar syrup
35ml fresh pressed apple juice
1 egg white
Add all the ingredients to a Boston shaker and dry shake to combine, add ice then shake till chilled. Strain into a chilled coupe and garnish with an apple wheel.
